The Japanese Art of Pickling and Fermenting by Yoko Nakazawa. I recently picked this book up and have read it cover to cover. I love the book design, the gorgeous illustrations and how accessible the recipes are for an Australian audience wanting to pickle and ferment in a Japanese style.
