Hardie Grant acquires Nilland’s “Saint Peter”
Hardie Grant Books has acquired world rights to Josh Niland’s Saint Peter: Chapter & Verse.
According to the publisher, Saint Peter is “a definitive statement from one of Australia’s most original culinary voices, and the most complete expression yet of what his world-renowned restaurant stands for”. The book includes essays about the titular restaurant’s journey, recipes and food photography by David Loftus.
Niland is the chef and owner of fish restaurant Saint Peter in Sydney. His books include The Whole Fish Cookbook (2019), Take One Fish (2021) and Fish Butchery (2023), all with Hardie Grant.
Niland said, “Saint Peter: Chapter & Verse is a record of a decade of work – not just recipes, but a new way of thinking about fish, modern craftsmanship and leadership. It captures the discipline, care and clarity behind the restaurant, and the belief that every part of a fish has value. More than anything, it’s an honest reflection on being in this business, shared in the hope of encouraging others.”
Publisher Simon Davis said, “Josh is one of the most original culinary voices of our time, and this book is his most complete statement yet. Saint Peter: Chapter & Verse captures the world of his restaurant Saint Peter for the first time and in the way only a book can – honouring a decade of this groundbreaking dining destination while opening the doors to the ideas and technique behind it.
“The result is something truly special – a landmark title with real permanence – and one we couldn’t be more delighted or proud to be bringing to readers around the world.”
Hardie Grant has scheduled Saint Peter for publication on 1 September 2026.
